~  Hi everyone,  here's a delicious,   NO-COOK,  easy   - GAMEDAY  - or summer picnic recipe  and one of our favorites   - GERMAN CUCUMBER SALAD  -  ummm-ummm.    :D

This is a  - GERMAN CUCUMBER SALAD -  very similar to one my wife makes and we really like.  Just see the  INGREDIENTS  and   DIRECTIONS below and get ready for this  NO-COOK  easy to make  RECIPE. 
 
▪︎ German Cucumber Salad 
 

Time:   8 hours 50 minutes.  Yield:  8 servings

▪︎  About

There always seems to come a point in the middle of summer when the heat is a-blazin' and unbearable, and not a single warm dish sounds appetizing. When that time rolls around, it's mandatory to have a recipe on hand that is cool, refreshing, and, as an added bonus, nourishing. German Cucumber Salad checks all those boxes and then some! Crunchy cucumbers and sweet onions swim in a rejuvenating, creamy, and sweet German-inspired dressing. The part that will make your ears perk up—this delightful, flavorful salad is chilled and eaten cold! German Cucumber Salad is here to ensure you stay as cool as a cucumber this season! 

▪︎  Ingredients

  • 2 large cucumbers, thinly sliced  ( - or - occasionally with additional sliced zucchini or squash)
  • 1/2 onion,  - optional - thinly sliced  (we enjoy it either way)
  • 1 teaspoon salt
  • 1/2 cup sour cream
  • 2 tablespoons white sugar
  • 2 tablespoons white vinegar
  • 1 teaspoon dried dill
  • 1 teaspoon dried parsley
  • 1 teaspoon paprika.  

▪︎  Directions

Step 1 -On a platter, spread the cucumbers and onions.

Step 2 -Season the veggies with salt and let rest for 30 minutes.

Step 3 -Squeeze the excess moisture from the cucumbers away from the platter.

Step 4 -In a large bowl, stir the sour cream, sugar, vinegar, dill, and parsley together.

Step 5 -Fold the veggie mixture into the sour cream mixture.

Step 6 -Refrigerate the salad for at least 8 hours   -or-   up to overnight.

Step 7 -Garnish with paprika and serve.

SERVES  12    COOK TIME  45  MINUTES    

 

Ready to win big at the game day party? This recipe will always be a big win: our Halftime Bacon Cheese Dip is ooey-gooey, and bacon-studded making it the ultimate football cheese dip.  Everyone on game day will be clamoring for more as these delicious flavors score a taste bud touchdown. 

◇    What You'll Need

  • 1 (1-pound) oval loaf Italian or sourdough bread, unsliced
  • 1 (8-ounce) package cream cheese, softened
  • 1 cup sour cream
  • 1/2 cups shredded Swiss cheese
  • 1/2 cups shredded Cheddar cheese
  • 1 cup cubed mozzarella cheese
  • 1/2 cup crumbled crispy cooked bacon
  • 3 scallions, sliced
  • 1 tablespoon whole grain mustard
  • 2 teaspoons Worcestershire sauce
  • 2 tablespoons beer
  • 1 teaspoon garlic powder

◇    What to Do

  1. Preheat oven to 375 degrees F. Cut the top off the bread about 1/3 of the way down and set top aside. Hollow out inside, leaving about 1-inch of bread around edges. Cut top of the bread and the bread that you removed into 1-inch cubes; set aside.
  2. In a large bowl, mix together remaining ingredients until thoroughly combined. Spoon mixture into bread loaf, then loosely wrap the bread loaf in aluminum foil.
  3. Bake 45 to 50 minutes or until hot in center. Serve with cut-up bread pieces.

~  Here's a variation of an old favorite   ▪︎  COBB MACARONI SALAD  ▪︎  that I put up on my  "Friends,  Family and  Neighbors  Post"  around the  4th of July this year.  ~

Want an interesting variation on an old favorite recipe,  why not TRY THIS  !

Our  ▪︎  COBB  MACARONI  SALAD  ▪︎. recipe  is a cross between a creamy macaroni salad and a fill-ya-up Cobb salad. Not only is this macaroni salad recipe easy to follow, but it's sure to be one of the top deli salads at your next summertime cookout, backyard bash, or family get-together. We especially love that this one is hearty enough to be a meal in itself!

  ▪︎ SERVES 8   -and-  COOK TIME  only  10 MINUTES  ▪︎

■    What You'll Need. 

  • 8 ounces elbow macaroni
  • 1 cup diced ham.  ( great for those leftovers) 
  • 1 cup diced cheddar cheese
  • 1 red bell pepper, cut into 1/2-inch chunks
  • 1 stalk celery, sliced
  • 1 avocado, pitted and cut into chunks
  • 4 slices bacon, crispy cooked and crumbled, divided  ( we cooked our bacon in the microwave last time )
  • 1 cup mayonnaise
  • 2 tablespoons white vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 hard-boiled eggs, quartered

■    What to Do

  1. In a medium pot of boiling salted water, cook pasta to desired doneness; drain well and let cool.
  2. In a large bowl, combine pasta, ham, cheese, bell pepper, celery, avocado, and half the bacon; mix well.
  3. In a small bowl, combine mayonnaise, vinegar, sugar, salt, and pepper; blend well. Pour mayonnaise mixture over pasta mixture; toss until evenly coated. Sprinkle with remaining bacon, garnish with eggs, and serve, or refrigerate until ready to serve.

■    Notes for more Mac Salad  quick and easy recipes.  

  • To make this even more like a Cobb salad, you might want to add some blue cheese crumbles and tomatoes to it before serving or swap the diced ham for diced chicken breast. Either way, it's sure to be delicious!

●  BANG  BANG  CHICKEN  SKEWERS   ●    Sounds good,  here's what you need and how to do it.

Cube a couple chicken breast into bite sized pieces.  
 

I mix garlic powder 2 parts, onion powder 1 part, chili powder 1 part, garlic salt 1 part, ground pepper 1 part 

Mix chicken cubes with seasoning mix.  Add olive oil and mix the chicken well.  
 

Put seasoned chicken cubes on skewers.  Put in the airfryer 20 mins at 400 degrees.  Flip half way.

bang bang sauce.  Kewpie Mayo and Sweet Chili sauce.  Mix well.

Once the chicken is done coat the skewered chicken with the bang bang sauce.  Coat it well.

~  OR  for a delicious pizza in the Boardman,  Ohio area call  Wedgwood Pizza.   Our favorite is the House Special with extra mushrooms and extra cheese,  ummm-ummm.   :)

This is an absolute favorite  ● *GAMEDAY ●   "go to" meals of all of them out there,  the ●  FRIDAY NIGHT ROASTED CHICKEN  ●  or a College Saturday afternoon or Sunday NOON or 6 pm before/after the NFL KICKOFF just anyday you want a delicious anyday meal.  And see the NOTE below to make it a really special Sunday meal.   And it's so easy ...... but that's our little secret.  :D.   *And plan ahead if you are having some of the gang over to keep the oven going for some fresh   - HOT -  or leftover cold chicken coming throughout your football  (or Guardians game)  on your sports party get-together.    ...... And Bon Appétit  everyone  !

SERVES  3 to 4 (depending upon size)   ▪︎  COOK TIME  1 HOUR  30 MINUTES 

Roasted chicken was the traditional main dish at Mr. Food's house every Friday night when he was growing up. Friday Night Roasted chicken is a simple recipe that's still packed with flavor and love. Why not start your own Friday night roasted chicken tradition?

  • ■   What you will need :
  •  
  • 1 tablespoon vegetable oil
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (2-1/2-  to 3-pound) chicken  (or 3 to 4 pound if desired) 
  • 1/2 onion, peeled
  • 4 garlic cloves

■   What to Do

  1. Preheat oven to 350 degrees F.
     
  2. In a small bowl, combine oil, paprika, onion powder, garlic powder, salt, and pepper; mix well. all ingredients except chicken. Place chicken in a roasting pan and rub seasoning mixture over chicken until completely coated. Place onion and garlic inside chicken cavity.
     
  3. Bake, uncovered, for 1-1/2 hours, or until chicken is no longer pink and juices run clear, using a pastry brush to baste occasionally with pan juices.

■   Note :    Make this a complete meal by roasting chunks of potatoes, celery (if desired) and carrots along with your chicken.

◆    What You'll Need

  • 1 (3- to 4-pound) top chuck roast
  • 2 cups beef broth
  • 1/2 cup soy sauce
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 bay leaf
  • 8 French or sub rolls, split in half

◆    What to Do

  1. Place roast in a 3-quart slow cooker. In a medium bowl, combine beef broth, soy sauce and spices; pour over roast.
  2. Cover and cook on LOW 8 hours or until meat is very tender. Remove meat from broth; place on a cutting board, and shred with 2 forks, removing any fat or grizzle.
  3. Place meat evenly on rolls. Strain broth and pour into bowls for dipping or spooning over the tender-as-can-be meat.

NOTE : I like these  better  Jersey Mike's brownies.  Both are good  these better.

One of our absolutely favorites  BUCKEYE BROWNIES  ummm-ummm lick your fingertips delicious.  Great for your  ● GAMEDAY ●  party but you better make PLENTY  of them.  And also check out below for other handy tips.

 ● MAKES 32 BROWNIES  in 40 MINUTES ●
 

These homemade layered brownies are so decadent, they might make you feel a little weak in the knees. Our Buckeye Brownies start off with a yummy homemade brownie batter, and then they get a creamy peanut butter filling for the next layer. To take 'em to the next level, we top these off with a 3-ingredient chocolate glaze. Put it all together, and the entire neighborhood will be lining up for a square!

 ●    What You'll Need

  • 4 (1-ounce) squares unsweetened chocolate
  • 1/2 sticks butter
  • 2 cups granulated sugar
  • 3 eggs, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup chopped peanuts
  •  
  • Peanut Butter Layer
  • 2 cups peanut butter
  • 1 cup confectioners' sugar
  •  
  • Chocolate Glaze
  • 4 (1-ounce) squares semisweet chocolate
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract

●    What to Do

  1. Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
  2. In a large microwave-safe bowl, melt unsweetened chocolate and 1-1/2 sticks butter in microwave on high 2 minutes or just until butter is melted. Stir until chocolate is completely melted. (This can also be done in a saucepan on stove over low heat.) Stir in granulated sugar then mix in the beaten eggs and 1 teaspoon vanilla until well blended. Stir in flour and peanuts then spread in baking dish. 
  3. Bake 25 to 30 minutes or until a toothpick inserted in center comes out with fudgy crumbs; do not overbake. Cool in baking dish.
  4. Meanwhile, to make Peanut Butter Layer, in a medium bowl, combine peanut butter and confectioners' sugar until well blended and smooth. Spread over cooled brownies.
  5. To make the Chocolate Glaze, place the semisweet chocolate, 2 tablespoons butter, and 1 teaspoon vanilla extract in a small microwave-safe bowl and heat mixture in microwave on high 2 minutes or just until butter is melted. Stir until chocolate is completely melted. (This can also be done in a saucepan on stove over low heat.) Spread over peanut butter layer. Cool until set then cut into squares.

    ●    Test Kitchen Tip

  • Make sure to ask if anyone is allergic to peanuts before serving these up at a potluck or to the neighborhood kids. Remember to grab a big glass of cold milk to wash them down, otherwise you’ll wind up with peanut butter-mouth! That’s where you’re mouth clamps shut. You know what we mean. It's happened to all of us once or twice!

I was in New Jersey/New York this past weekend.  Amazing pizza.  I Tried a couple places

I had some amazing cheesecake too I ate it too fast to take pics.  Back in CA eating lettuce and drinking water for a week.

OK I try to balance recipes  somewhat    - but -  mainly look for good and relatively easy to make and still delicious  ready for your next  ● GAMEDAY ●  or family meal.   Translation :  I try to mix grilling and oven and easy to follow instructions to serve to your family and friends.           (And not all pizzas and tacos or wings everytime  for get-togethers.)   

And you can save some  $$$  when you stay off the phone and  MAKE IT YOURSELF !

You  can  mix some lettuce in with your other menus and be easy to do and still be  delicious  too !

That is my challenge to do with ideas from you fellow readers  and I thank you.   Just  read this page number 89..... for example. 

 SO  Bon Appétit   and have some fun on your next  get-together.    :D

 One of my favorites and not in a store bought bottle HOMEMADE  COUNTRY BUTTERMILK DRESSING.  Great for any kind of get-together or family dinner.

What You'll Need

  • 1 cup mayonnaise
  • 1 cup buttermilk
  • 1 tablespoon minced onion
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon thinly sliced fresh basil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

What to Do

  1. In a medium bowl, combine all ingredients, mix well.
     
  2. Chill at least 2 hours before serving. Store in refrigerator in an airtight container.

So does some good food  HOT  off the grill    - or -   a good recipe out of the oven  or  even from the microwave.    Mmm-mmm good !

I'm making baked cod fillets marinated all day in a rye whiskey sauce for dinner with rice or potato salad and a regular Caesar Salad. The sauce has soy sauce, rye whiskey, fresh sliced ginger, brown sugar, salt, pepper, lime juice. Very good eats with minimal calories or fat content.😋
